Leviticus, like all of the inconvenient parts of the Bible, is meant to be interpreted metaphorically. We really have no way of knowing the value of a shekel.
In any case, the LORD didn't create the whole universe at one time and at the time when Leviticus was written HE hadn't got around to creating free market pricing.
I know I've been holding on to my bondsmen until HE comes up with a better incentive.
