It's obviously very difficult to ....
1) make goo goo noises
2) wave the stuffed toy
and
3) work the camera
all at the same time
Never mind by the time the 4th one comes along yoou'll forget that you even have a camera.

For someone who has done photography courses and loves using SLRs, I'm hopeless with an instamatic.

SLRs?? Well that explains it - you have obviously forgotten about parallax error. It happens when you are used to WYSIWYG.

What You See Is What You Get
What you see through the lens is what you photograph.
That's the advantage of SLRs - but with "pocket" cameras you look through a viewfinder and the lens actually photographs a slightly different view - that's why there's a little square in the viewfinder - to compensate for the difference - but the closer you get to your subject the more noticeable the difference.
The difference between the viewfinder and the lens is called parallax error.
