Toasted Muesli
Toasted muesli, or granola, makes a great healthy breakfast, with either ice cold milk or some natural yoghurt. It's also delicious as a late-night snack.
Ingredients (approximately 20 servings, depending on how greedy you are)
- 2 cups rolled oats
- 1 ½ cups shredded coconut (not dessicated)
- ½ cup wheat germ (omit for gluten-free muesli)
- ½ cup bran (ditto)
- ½ cup raw, chopped mixed nuts
- ½ cup sesame seeds
- ½ cup sunflower seeds
- ½ cup pumpkin seeds
- ¼ cup honey
- 2/3 cup vegetable oil (not olive oil)
- 1 cup dried chopped fruits
Method
Put the first eight ingredients into a shallow ovenproof dish, and mix well.
Warm the honey and oil together (warm, not hot) and pour the mixture over the dry ingredients, then mix thoroughly with your hands.
Bake in the oven at 180oC. Every five minutes stir the mixture thoroughly using a slotted spoon to mix the layers. When it is golden brown (15 to 20 minutes) remove from the oven and leave to cool completely.
Add the chopped dried fruits when it is cold. If you add them when it’s still warm, the fruit becomes hard.
Store in an airtight container. Keeps for about a month.
