BalsamicDragon: A really snappy article! Well done.
One often gets the feeling (call it envy) that people who make things like mayonaise from scratch are kranks. Anybody who invests time and energy to produce something that's almost as good as the same thing bought at the corner store must have an ulterior motive, probably sinister.

Well, apart from looking like Legoland, my home is pretty nice.
And I am on a roll this evening - I just made the best mayonnaise in the history of emulsified egg sauces. Just because the Gruesomes suddenly wanted potato salad. 
I'm turning into Martha Stewart!

Hopefully, the transition won't end with you behind bars.
I wish we were within sampling distance. There's not much I wouldn't do for good mayonnaise... except, perhaps, try to make it.
