Surely the answer is in the condition laid down in the question!

Omnipotent = Having unlimited or universal power, authority, or force; all-powerful.

So if you have unlimited power then the answer to any question that starts "Can you..." is obviously yes.

God could quite happily create a rock too heavy for him to lift (because making himself unable to do something is one of the things he is able to do, being omnipotent) but can change his mind and lift it any time he wants.

That's what omnipotent means, being able to do anything you damn well want, whether it's logical or not.
