These are 'add one line' limericks, but with every line added, you can list, in parentheses, {[(brackets if you prefer)]} up to two rhying words that are banned from being used.

For instance, if my first line was:

A druid, who had helped build Stonehenge,

Then I could add '(not Penge or hinge)' and those words could not be used. Mind you, with that particular one, what other rhymes it leaves is a bit of a mystery, but it gets the brain working.
