lid on or lid off

We cooked this on Saturday night and quite enjoyed it. We didn't know whether to leave the lid on or off. For the first half we left it on and, when this looked like we would be left with a good pint of liquid left in the pot, we took the lid off.
I think the lid should be off for the whole time.
Also instead of using a handfull of peppercorns we would use chunky cracked pepper next time. Even though the peppercorns do loose some of their punch, there were too many and they overpowered the food.
We watched Magnum Force while the casserole cooked and Calandar Girls while we ate it. For desert we had sticky date pudding made with finely sliced glace ginger doused rich cream for desert.

Glad you enjoyed it - yes, I always leave the lid off. I'm not much of a lid-on cook at all, actually.
