Green manure

Hi All
I would like to find out more about "green manure". Gardeners World have mentioned it a fair bit recently and I don't know what to sow. I'm guessing it depends on what you want to do to your soil, but I have no idea what possible seeds are classed as green manure - hence, ask the experts! I'm just after something to put on my veg patch until spring. Any ideas gang?

I'd suggest mustard, but you'll have to get it in reasonably quickly.

Field beans are one you can put in now. At least I hope you can as I sowed some yesterday.
The organic gardening catalogue has a long list of green manures that you can choose from, though it's probably getting a bit late to sow most of them now.
