Sorry I didn't spot this earlier FB************ - good thing you bumped it up
Excellent entry I'll put my reputation on the line and say there don't appear to be any typos.
The only suggestion I'd proffer is some formatting of the trade-names for yeasts in the last section to make them differ from the rest of the text eg 'Domo' yeast

So with modern bread the yeast is always the same, just the dough and the method and baking being varied to give the different types of bread?

Good entry - it's amazing how long it's taken from the first accidental discovery of yeast to the produciton of it in large quantities.
