I went a bit crazy in spring and planted about 10 different chilli bushes in my garden. Now I have a bumper crop and need a really good recipe for pickling them. Any thoughts?

Don't pickle them...put them all in a large jar full of vegetable oil. Leave for several weeks and then you'll have a hot frying oil for use in frying chicken for a Balti.
Then, every time you use a bit of the oil, replace it. Should last many years and make your Baltis legendary. (Mine are, but I had to buy the chillis )

Great idea. Sounds like you could keep this oil thing over a lifetime!

Unfortunately not a lifetime...the chillis lose their potency after about a year or so. But if you keep growing the large crop you'll have an annual harvest. I forgot to mention, just lop the tops off the chillis, you don't need to de-seed them as the seeds themselves are quite hot!

-understatement ! The Chinese do a good Chilli pickle, but I'm unable to find a recipe as it's so cheap no-one seems to bother to make their own, but it might be worth consulting a Chinese cookery book, or a specialist pickle book, which included brilliant things like Rosemary jelly and Green mango paste. I have such a thing, but it's the other side of the world.
If you screw the lid tight on your chilli oil it will make great presents next Christmas.
