That being said anger/fire was associated with yellow bile in the ancient theory of humourism and phlegm (blue) corresponded with water/calmness ... so a substitution of yellow for blue perhaps?

Purple springs to mind as a possible colour that could change in different depictions, and has a variety of shades, in fact what we think of as Imperial Purple was decidedly reddish. Certain dyes were VERY expensive so, like the imperial purple, were reserved for certain groups. (and violet-violence pun??)

Another line is the fact that historically Christianity has used specific colours when depicting saints (red for martyrs, blue for the Virgin Mary, although especially in the Eastern traditions, she wears a red mantle)

Incidentally, red stained glass is made using gold, hence it not being very common in old windows, and reserved for important saints.
