Utensils for Pickling Onions????????

Goodday,
I'm John from Australia, and I was looking up recipes for pickled onions and came across one on h2g2 which sounds O.K. (How to Make Perfect Pickled Onions - http://www.bbc.co.uk/dna/h2g2/A655535)
I, however, have a big problem with the instructions insofar as they warn me against using steel or iron pots and instead suggest aluminium.
All of the advice that I have previously obtained, from diverse sources, has warned against aluminium. Please help!!!
My other question is: - Notwithstanding the discussion above, IS STAINLESS STEEL O.K., and if so what GRADE / TYPE is suitable?

I see you are going for the older cooking from scratch version. I don't actually know the answer to your question, however stainless steel pans are pretty inert so would imagine they are ok, as you say alluminium is a bit dodgy these days!
My dad used to boil up spices in viniger so expect a strong smelling kitchen while cooking them!
I am in UK and ready made pickling vinegar is available as pickled onions are popular here, don't know if it would be available where you are, the jars have wide necks and are designed to be used as pickling jars. The ready made vinegar is ok as have used it myself but your method sounds like good fun.
