My mouth already starts to water just from reading the names of the dishes.

I just read your recipe for making paneer and now I'm wondering if you may be able to give me a recipe for Indian tea. The one with spices, milk and honey.

Hi There,

Here is the recipe you need:

Kashmiri Tea

1 tsp loose tea
4 cardamom pods, bruised
1 small cinnamon stick, broken up
Saffron threads, a pinch
4 cups water
2 tbs finely powdered almonds
Honey, to taste
Mix everything except honey and almonds in a saucepan and bring to a boil. Reduce heat to a simmer and let steep for 5 minutes. Put a teaspoon of almonds in the bottom of each cup, and pour hot tea over. Sweeten with honey to taste.
Serves 6

Usually I drink Chai or Masala tea.
My recipe is
Boil a cup of water, put a pinch of ground cardamom seeds, half clove, a pinch of black pepper powder, and little bit of crashed ginger. Put a tea bag or a spoonful loose tea, boil for few seconds and serve with milk and sugar.
There are some similar recipes on internet but they use lots of spices, which spoils the taste. I think very little quantity of spices is sufficient else it taste like a broth.

Another one I like is with basil leaves. Put fresh basil leaves and a tea bag in boiling water and serve with milk and sugar. Basil is good for blood purification.

Oh, and you just let the tea boil for a few seconds? Is that enough to get the taste?

ummmm...... say 15 to 30 seconds are enough if you boil it for long it tastes bitter, though some people prefer that strong taste!

As you make plain tea, you never boil tea bags but put it in the cup and puor boiling water in the cup and you still get taste smiley - smiley
