You might like to add the short stories to the list the Sea and Little Fishes and Theatre of Cruelty both set on the Disc. The Sea and Little fishes is a very amusing exploration of Granny Weatherwax's headology at the witch trials.
Whilst Theatre of Cruelty is a watch story set between Guards Guards and Men at Arms. 
Troll Bridge is 'Discworldy' they should be included in the series even if its not official Discworld stories.

doh I'm not sure why I wrote that last line as Troll Bridge actually has Cohen in it...
