I love papaya, and never know what to do with them- we get the really enormous sizes ones here, and I often make the leftovers into sorbet, along with equal amounts of watermelon and a bit of lemonade and honey.



I was wondering about the enzyme content of the tinned stuff - as I know that pineapple contains something similar, and that is destroyed by the heat of the tinning process.

Anyway, I am going to try it out on some pork fillet, I'm sure it will be delish!
