I try to make it a point to thank the bus driver when I exit the bus. I say please and thank you at the local fast food places.
When someone says 'Have a nice day' as part of their job duties, I always try to respond 'You too'.
It's seems silly, but I feel that recognizing that these people are in fact *human beings* and treating them with courtesy and respect is important.
At X-mas, we always leave a gift for the postman and the garbage men. (even if it's just a X-mas card with a note of thanks and a couple of lottery tickets)
I think it was the film 'Brazil' that Robert DeNiro had the great line 'We're all in this together'.
