I have a trivet that I put over the fire, made of three horseshoes welded together on three legs. This means you can put a saucepan or frying pan on the fire. I've also seen people who have a tripod from which they hang a flat piece of metal, which means they can cook flat bread, or use it as a griddle. They also hang a billy can from it (which you've already covered). I've also often seen people bringing grates to put over the fire, which means you can cook with several pans at once and it's quite a nice thing for a communal fire at a camp.
