A minor point, but lasagne was originally a vegetable dish (as were most pasta dishes).
Perhaps you should have listed your main recepie as a "meat alternative"!

Also, you won't find a vegetarian form of Parmesan (it is, by definition, not vegetarian). So remember to replace that. Not sure about the other suggested cheeses...
