One of my favorite additions to ramen is chopped spring onions or shallots. They don't require sauteeing as they soften up nicely in the boiling broth. Ditto for sliced or chopped green bell peppers ("sweet" peppers to some of you) though they tend to retain more crunch, which IMHO is a nice change of texture.
Protienwise I've found that deli sliced sandwich meats make a good addition chopped or shredded (roast beef w/ beef ramen, turkey w/ chicken flavor, etc) as well as any leftover roast chops or steak you may have lying around.
As for the thread title, spicing, the be all end all is fresh sliced or grated ginger, add a PINCH at the same time you add the ramen flavor packet-- a little goes a long way!
