An excellent version is prepared by the chef at the Good Food Company just off the A12 outside Colchester at Marks Tey. He adds a few chopped capers (the tiny ones are best) and also adds a tiny splash of brandy. Served over crayfish tails the result is superb. He kindly passed on the recipe after my wife and I were completely stumped at what the extra little something was.
