The texture of the sauce will improve no end if you peel the tomatoes first, and take out all the seeds before chopping them. In order to peel the tomatoes, dip them in boiling water for a couple of minutes and remove the peel.
Also, as a general rule, Italian sauce is seasoned only with oregano (added very early if dried) and/or basil (added right before serving).

I'd add a stick of finely chopped (or pureed) celery. And I also chop up an apple and add that too, but that's just me.

I clicked the reply button to note that chopped or pureed celery (my preference) would make this recipe even better--but the point was already made. The apple idea is a new one for me though. Hmmmm. Might have to try that.

Mmmm... strictly speaking, celery and apple are definitely not included in the recipe for Italian-style tomato sauce (tomato purée would also be shunned by any true-blue Italian cook), but I suppose variety is the spice of life

Indeed, I like to think of it as my own brand of fusion cooking... In the same spirit I don't use ghee when cooking curries but instead use olive oil, just because I like the taste!
