Hi Anne,smiley - smiley The staple food of the African in Africa is corn meal (polenta) which they call mielie meal. It makes a super breakfast porridge and I have it every morning of my life. It takes quite a time to cook - about 15 minutes, but it is extremely healthy. and one must admit that most Africans have the most beautiful teeth which must have something to do with the fact that they eat both corn ground or milled, and also corn on the cob. I suppose that they also eat less sugar than we do although it certainly is grown in South Africa. I shall try it as a main staple carbohydrate instead of rice or potatoes and cook it the way you recommend and let you know. Thanks for the receipe. Regards AR1 smiley - schooloffish
