If you can't get sloes, or if (like me) you have surplus blackcurrants you can make this delicious variation of sloe gin. A beautiful winter liquer.
Put about 8oz washed and stalked blackcurrants into a jar with 1 bottle of gin - if you use a demi-john you can use up to 2lb of fruit with 4 bottles. Crush the fruit a little with a wooden spoon handle and then cork the jar and leave for about 2 months. Strain off the gin and add 6oz sugar to every pint, return this to the rinsed out jar or demi-john and leave for a couple of days stirring or swishing at intervals until the sugar has dissolved. strain through fine muslin and bottle. It can be drunk quite soon but it is much better left for 6 months.
