You can also buy different breeds of turkey.
Free range Bronze turkeys are available from butchers and from some large supermarkets nowadays. They're really nice, perhaps a bit stronger tasting and a bit more succulent than standard turkeys.
The feather quills are black on a bronze turkey, not white as on a normal turkey, so you have to make sure that you pull them all out, if you find it difficult pull any remaining visible quills out when the turkey has been cooked!
Look out for them, they're good if you can find one!
