Italian minestrone. Ingredients vary according to different regions and seasonality of vegs.

The idea behind minestrone is "the more vegs one uses, the better it tastes", but do not use mushrooms, artichokes, eggplant, truffles smiley - biggrin or any bitter vegetable like chicory.

The most common vegs used are (diced or shredded): courgettes, green beans, carrots, celery, caulifloweer, chard, potatoes, spinach, leek, beans.

Preparation. Chop garlic (if agreeable), onion and bacon cubes and fry in olive oil till golden brown. Add vegs, stir and let foliage shed its water (2 to 3 minutes). Add water and chicken stock (if liked) and salt to taste. Cook on a gentle heat for about two hours.

Toast a slice of bread per person, pour the minestrone on top, add grated parmesan (Parmigiano) cheese and a drop of extra virgin olive oil.
