Lovely article, all about my favourite food. Heard a quote on the radio the other day: "French cooking shows off the skill of the chef. Italian cooking shows off the skill of God." Nicely put.

Once had the honour of eating an Italian meal in an Italian household in Italy, but without knowing the traditions. I therefore accepted a second helping of pasta when it was offered, not realising that that particular dish was just the start of a long long meal, with more and more courses of different types of pasta and sauce etc. The experts would just have a small taster of each and fill up slowly and happily. I went and filled up on the first course. Doh! We have a lot to learn from our italian friends, that's for sure.
