I actually used to love riding the smaller lanes in my biking days, though as you say the grass in the middle could be difficult.
One problem not mentioned is that Devon hedgerows tend to be solid earth, so if you meet a vehicle coming the other way there is nowhere to pull in. The other driver is nearly always unwilling to reverse for a motorbike (particularly the tourists, who often seem scared to reverse anyway), and it's pretty tricky reversing a bike!
Another hazard is lanes which suddenly turn into quagmires of deep, sticky mud - I well remember getting totally stuck in such a morass at Allaleigh (near Dartmouth).
