High pressure, not much fizz!

Hi,
Can anyone tell me why after about a fortnight (a little bit early), the bottles are rock solid, however when I open it, ALOT of air escapes, and the beer tastes fairly still?

If you let the air out slowly and carefully - it will probably take several minutes - the ginger beer will retain most of its fizz. It's when you let the air out rapidly that the CO2 dissolved in the fluid will coalesce and rush out en masse.
