I have a feeling it is purely a matter of opinion, so whichever you prefer is a good choice. I'd personally go for the small end, as the large end down lowers the center of gravity and therefore provides a more stable egg; but as I am a poor, uncivilized American and own no egg cups, it's a moot point and I have to eat only hard-boiled eggs on paper towels.
