What about Giora Feidmann? He is absolutely definitive in Klezmer and inspired me to take up this wonderful, versatile instrument in the first place!
I also play Chalumeau, it is possible to "overblow" it, but this requires more air pressure, sounds very shrill, and must be closely controlled with the lips rather than just the holes to get the tone right.
