Eggs don't make good biscuits, they make cakes, my dad always made it without, whats the diference?

I know I'm a few years late replying to this, but this recipe only calls for one egg yolk.
I'm no expert (but I have made the biscuits - it's my mum's recipe) but I think that egg whites are the part of eggs that make cakes cakey...

The ginger biscuit recipe I use contains a whole beaten egg. The biscuits it makes are chewy, but they're definitely still biscuits and not cakes or buns.
