A Conversation for Tom Collins
sour mix

My understanding is that you should use sour mix rather than sugar and lemon: this way you get a frothy, cloudy drink.
A recipe for sour mix is:
whisk an egg white until it is light and frothy
stir in one cup of sugar
and then two cups of water and then two cups of lemon juice
It contains raw egg but, even so, it lasts about five days. If it sets, you can shake it up again. Useit in slings, fizzes and collins. Even better, use it in a large number of mocktails where it provides some backbone to non-alcoholic drinks.
