A Conversation for Ice Cream Floats

The fact that ice cream contains a lot of air supposedly helps in making
a "float".
We are about to sign up for Italian gelato which has no air added
and I wonder if anyone knows the effect this would have on a "float"
Look forward to being advised by anyone.
