The item on IW doughnuts is incorrect in almost every respect. There is no evidence the doughnut developed independently on the Isle of Wight. In fact the recipe for the 17th century Dutch oliebollen is virtually identical to both the IW doughnut and the American 19th cent domestic doughnut. Interpretations of the Raine book are also incorrect. They were never locally called 'birds nests': this was merely a personal childhood recollection of the author. Doughnuts with plums in the centre would be too large to cook. As in some other Victorian recipes, 'plums' refers to raisins.
