I'm not sure about "Maison" as Joseph Mason's original name.
The earliest reference I can find is in The Brooklyn City Directory for the Year Ending May 1st, 1867 where we have:
Mason & Au, confectioners, 81 Fulton
and:
Mason, Joseph, confectioner, 81 Fulton
I would be interested to know where you have seen the "Maison" form.
