Flying upside-down

Hi,
I tried this post in the "physics" forum, but got no joy. So I'll try here.
If a wing profile provides lift - why, when a plane turns upside down, doesn't it fly into the ground? And how did early planes achieve this when the fuel in the tanks would flow to the top and not be able to get to the "carburettor thingy"
