I have to admit, because of time constraints I usually peel, boil, mash and add butter and milk/single cream and season.
However, for a _really_ nice mash try this:
Bake a number of large, good quality baking potatoes in the oven (yes this is jacket potatoes I know).
When done, take out of the oven, split in half and scoop out the flesh into a bowl. Mash the flesh, then add butter, single cream, salt and pepper and a dash of nutmeg.
The skins can be topped with cheese and grilled as a snack/starter
