My mum used to add finely sliced, sweet pickles or pickle relish, and sometimes olives (with or without pimento) to her tuna salad. It made the best tuna sandwiches.
I suppose that, in a pinch, tuna and mayo will be enough, but you'd better be prepared by reading the entry on Cinco de Mayo.

mmmmmm... I've got some gherkins... I think they might work quite nicely too... and perhaps some onion... and sweecorn, and of course the tuna and mayo... I mean. what would a tuna and mayo sandwich be, but for the tuna and mayo...
