Here's how to make paneer really easily.
Ingredients :- 1 gallon of FULL FAT milk
lemon juice or vinegar
Needs :- Really big cooking pot
Cheesecloth or clean thin tea towel
Large container
String

Get your large container, string and the cheesecloth/towel. place the towel over the container and tie it with the string around the top. doesn't have to be tight but not too loose either. This will be used to strain the milk and curds. Set in sink ready.
Pour your one gallon of FULL FAT milk into a really really big cooking pot. It must be full fat milk!!! Bring it to the boil BUT DO NOT LET IT BOIL!!! Just as it starts to threaten to bubble take it off the heat and start to add the lemon juice or vinegar slowly. Watch as the milk starts to curdle. When the liquid in the pan is a watery opaque slightly white colour, stop adding vinegar or lemon juice.
Take the pot over to the sink where your container is and drain into it. The cloth should catch the curds while the liquid strains away into the container.
Pull the sides of the cloth up around the curds enclosing it, and squeeze as much fluid out as you can. Place to one side.
The large pot should now be filled with cold water to the top and the cheese laid on a draining board by the sink still wrapped in the cloth. Place the pot on top of the cheese. Walk away...eat a curry, cook a curry, drink some beer. The cheese is ready when not much fluid is leaking out and the cheese throught the cloth feels solid but springy......It can't be difficult, i managed it on my first try and it was excellent.....Good luck
