A similar thing is done at Chinese restaurants. Certain dishes (usually the ones in the "sizzling platter" column on the menu) will be served thusly:

1. A server brings out a bowl of some sort of stir-fry in one hand, and a hot cast-iron platter in the other.

2. The server pours the bowl onto the platter.

3. A sizzling sound and accompanying smell arise, drawing attention.

However, there is a slight difference between what Chinese restaurants do and what American/Mexican restaurants do. Rather than putting butter and food on the platter before bringing the whole concoction out of the kitchen, the patrons actually get to see the act of food being poured onto the platter. Thus, the impression of fresh, just made food is even more strongly conveyed. The sizzling sound is caused by the massive amounts of oil that the food is cooked with; Chinese dishes don't generally use butter.
