Hi y’all

This is my recipe journal. My goal is to share recipes with my fellow researchers and have them share their favorites with me. So share your favorite recipes and comment on the ones that you have tried. I believe it was Thorin who said “If more of us valued food and cheer and song over horded gold, it would be a merrier world”. So lets make this a merrier world.

Hash Brown Casserole

26 oz of frozen country-style hash browns (shredded potatoes)
2 cups shredded Colby cheese
¼ cup minced onions
1 cup milk
½ cup beef stock or canned broth
2 tablespoons butter, melted
Dash of garlic power
1 teaspoon salt
¼ teaspoon ground black pepper

1) Preheat the oven to 425 degrees Fahrenheit
2) Combine the hash browns, cheese, and onion in a large bowl.
3) Combine the milk, beef stock, half of the melted butter, the garlic power, salt, and black pepper in another bowl and mix until well blended then pour the mixture over the hash browns and mix well.
4) Heat the remaining butter in a large, oven proof skillet over high heat.
5) When the skillet is hot, spoon in the hash brown mixture. Cook the hash browns , stirring occasionally, until hot and all of the cheese has melted (about 7 minutes).
6) Put the skillet into the oven and bake for 45 the 60 minutes or until the surface of the hash browns are dark brown

Servers 4–6 as a side dish.

NOTE:
If your skillet isn’t oven proof you can also put the hash browns, cheese, and onion in a large microwave-able bowl then add the milk, beef stock, … mixture and microwave and stirring occasionally until hot and the cheese has melted and blended. Then spoon the mixture into a glass baking dish and bake at 425 degrees Fahrenheit for 45 to 60 minutes or until the surface of the hash browns are dark brown.
