You know...for years I was under the misapprehension that the shamrock pattern they sometimes do in the foam was made with the barman's pinky.

Not at all - years of intense training and academic courses are expended on it. They have to achieve a level 10 craftmans guild certificate and every mis-drawn shamrock is considered a black mark against them whereby they have to drink a whole pint of Budweiser in 5 seconds flat. A fate worse than death, normally.
