8 oz Beremeal
2 oz SR Flour
1 heaped tsp baking soda
1 level tsp cream of tartar
1/2 tsp salt
1oz marg or 1 tbs cooking oil
buttermilk or milk

Stir dry ingredients together. Rub in marg or add oil. Mix to a fairly soft dough with buttermilk. Roll out into rounds then cut in quarter. Bake on hot griddle until brown or in oven at 425F or Gas 7 for approximately 12 minutes.

Me too. In fact I went for oil in the end.

Beremeal is a kind of oatmeal, and I ended up with dwarf bread. I was expecting scones. smiley - somersault

Rising agents brand new today! Flour was plain rather than SR, but I think it really is the fact that the beremeal is basically fine oatmeal.

Not unpleasant dwarf bread. Dwarf bread you can cut in half and butter. But dwarf bread nonetheless.

What I want to know is whether the salt is necessary for the soda and cream of tarter to work, or if it's just because that's how Shetlanders like their food.

Cream of tartar and baking soda is how you make alternative baking powder but I'm not sure if it's the same quantities as that recipe or not. The alternative doesn't have salt in it so I would guess it's a taste thing.

I've cooked with oatflour a bit, but assume the beremeal is heavier?

It's very brown. It looks and feels as if it has oat bran in it. I might try making porridge with it and see what that's like. smiley - biggrin
