I remember the oldie-but-goodie on Cuban Food that appears on today's front page. 
It occurs to me that it should now probably include a link to my entry on the Cubano (Cuban Sandwich). 
I believe there was another researcher who was going to link to it, probbably in regard to a roast pork entry. If you can figure that one out, there's another entry that should be included. 
I believe his mention of the cuban dish was in the PR thread of the Cuban Sandwich entry.
