I have two new baking pans. The first makes 20 tea cakes with little depressions in them to hold fillings. The second makes 12 square fluted shells for mini-quiche or whatever other fillings you want to use. Now I have to experiment with my gluten free flours to come up with a cake base and crust that will actually come out of the pans. I have until December 10th. That's the date for my open house at the library.

I'll do that, Dmitri. What I'm hoping is that I can come up with a pie crust that will hold together enough to use for pasties and other savory pies. With winter coming, I really miss my meat pies. I've always preferred real pie crusts over biscuit toppings or potato toppings.
Speaking of potatoes, I've experimented with several substitutes for bread or cracker crumbs in salmon cakes. The one I like best is instant mashed potato flakes. Well, cold, real mashed potatoes is better, but I seldom have any on hand.

That's true at my house, too. Leftover mashed potatoes do not happen in Elektra's universe.
I used to try to make pie crust in Greece. Solidified olive oil does NOT make good pie crust. You get *one try* to roll it out, honest. Then it's impossible. And that's with regular flour.

I really must get round to using my new 'muffin tray' I bought... 12 depressions in it, which I guess could be used to make things of all kinds... I want to make the Welsh rarebit cheese muffins, but I keep forgetting to get hold of any baking powder and baking soda actually... I wonder if I could make a kind of crumpet in them...

My sister puts a layer of ham in the bottom. Cracks an egg over the top, then sprinkles is with cheese and puts them in the oven (not sure how long for) they come out very tasty, indeed!

Muffin pans are also good for individual sized meatloaves. I make a bunch ahead of time, freeze them, and dinner's settled. At least I did when my freezer was bigger than a boot box...
