When Shiitake are dried, their flavour and aroma intensify,it is for this enriched fungus flavour, coupled with the convenience of using dried Shiitake, that they are most appreciated. The drying process also increases the fibre content to over 40 %.
The distinctive taste of Shiitake mushrooms suits Chinese cooking better than Japanese.

Tav is the opposite of a Nazi from what I know.

It just highlights the stupidity of such comments.

Mind you, I'm eating lamb tomorrow. And #1 is already giving me a hard time about it smiley - laugh She's my daughter, all right.

Thanks, Anold, once again! Good to know that drying and rehydrating them increases the fiber content. A girl can never have too much fiber in her diet. I appreciate the info. smiley - smiley

I don't know Tav (Tavaron de Quirm, yes?) but I've seen her around a bit and she certainly seems to be un-Nazi-like.

Sho, that reminds me of an episode of The Simpsons when Lisa Simpson becomes vegetarian after a trip to a petting zoo. I hope Gruesome #1 won't be too hard on you. smiley - winkeye

She makes me feel really bad - she was vegetarian for a long while, but she likes to try different things too much to remain so.

I'm probably the only person in the world who has never watched the Simpsons - I have no idea about it at all...

Well, it's just TV, so it's not like you're seriously "missing out" on anything. I like the show enough to watch, and it's on every day here right around dinnertime. K's a big fan, so we wind up watching. But anyway... one of the characters is an 8-year-old girl who, after falling in love with a lamb at a petting zoo, sits down to a dinner of lamb chops and you can imagine the vision she has. smiley - laugh

Just got back from a trip to the Whole Foods, and I have a question for the cooks. K thought he was picking out bok choy, but instead he grabbed endives. I've never had them before. Cooking suggestions, anyone?

Soaked some kelp overnight in the fridge so I'm going to prepare some stock this afternoon. I'll freeze it in ice trays if I have to- and then I'll be prepared if I want miso sometime this week.

Mind you, I get a lot of that. When I'm here Germans are always asking me why the England smiley - football team are rubbish. As if I care about smiley - football (apart from Sheffield-Wednesday-Nil who I adore)

And in England everyone is always asking me what it's like to live surrounded by Germans.
