I've never cooked gazpacho myself- it's always been all raw. Never made Vichyssoise before, but I love it. K doesn't care for cold soups, though, so I probably never will make it.
I don't mean to make the poor guy sound like a really picky eater. he's not. There just happen to be a handful of things I really like that he really dislikes: melon, cucumber, raw onion, lots of cilantro, goat cheese, and cold soups. So the perfect thing would be melon cucumber soup, served cold, with a mound of cilantro and onion on top.

Here are lots of gazpacho recipes; low fat, the ones containing beans definitely need some cooking though. But obviously add quite a lot of protein.

Some of those sound really good.
I wouldn't want to eat uncooked beans, unless they'd been sprouted. And sprouting can get stinky, from what I hear.

Not to mention hard on the choppers!
I've only ever eaten green beans/ wax beans/ yellow beans raw. And mung bean sprouts, of course. I've actually never much cared for beans until my late twenties. And even still, I need 'em in something fairly spicy. Hopefully they'll keep growing on me.
You know what part of my problem is- I think it's one you and I share, Terri... I enjoy cooking very much, but I don't really enjoy eating as a recreational activity. Even if I've worked hard at it, and it tastes good, the actual eating part isn't the orgiastic experience some people seem to have.

Yup; I'm the same PC. I love cooking for other folks & pick at scraps of the results; i suppose i don't do it for the "Joy of Eating" but for "joy of seeing my fiends eat"
So: if we invite FF round, we should all be happy. If she brings her ; no prob with leftover veggie stuff! perfect guest!

A lo-fat gazpacho would be anathema. Olive oil is the nectar of the gods.
I'm having Frankfurter Gruene Sosse for dinner. At least the sauce is raw. Boiled potatoes, hardboiled eggs and a sauce made from sour cream (or yoghurt) plus tons of finely chopped mixture or herbs (I've used parsley, dill, tarragon, chives and watercress). Serve with a good rye bread.
I like the German word for chives: Schnittlauch. Literally, 'snipping leeks'.

Not sure I've had much gazpacho that wasn't low-fat, but I'm not averse to imbibing excessive fat occasionally, if it's olive oil.

There´s a similar recipe very much known in Andalucía: Papas Aliñás
( dressed potatoes)
on the potatoes you add chopped spring onion and parsley, salt,vinegar and a generous amount of olive oil.
Olive Oil is just and
for your whole body: from the neurones´sinapsis to the last tiny cell.
I´m going to prepare this for dinner:
Pear salad: pear, black olives, cheese,toasted almonds, lemon and lettuce (dressed as you know)

The potatoes sound divine! I'm rather fond of potatoes alioli, too, and patatas bravas. In fact, I don't think there are many ways potatoes can be prepared that I *don't* like.
The pear salad sounds nice, too. I still have yet to find a suitable replacement for almonds in most things, but someday I will. A local shop we sometimes buy specialty-type grogeries from sells a champagne-pear vinaigrette dressing with crumbled gorgonzola in it. It's scrumptious, but loaded with fat, so I don't use it too much!

I like pine nuts (piñones) tiny, drop shaped, full of calcium... delicious.A bit expensive. I also put a ton of toasted sesame seeds, very healthy and tasty too.
I prepare a thick sauce to add to the escalibada ( baked vegetables) with hazelnut, walnut, almond, pine nut, garlic, pimentón ( is like Paprika, but different,is delicious and quite used ) vinegar, salt and oil(olive of course)

Ah, but pine nuts are still nuts and I am still deathly allergic, unfortunately. So no pesto for me, either. It's kind of a drag, because some really lovely things are off limits. It's hard to find a nice carrot cake that doesn't have both walnuts and marzipan (almonds).
Coconut, for some reason, doesn't bother me if I have it in small enough amounts. But the other tree nuts are a big no-no.

Pumpkin seeds? They'd be nice with pears and cheese. Especially if toasted in a pan first.
Pimenton - yes, nice stuff. We can get both the 'dolce' and 'picante' varieties here, in little, square tins. It's quite different to paprika because it's smoked.

pumpkin seeds are excellent for men. For prostata, don´t know the name in English, When a child my mother gave them to us to treat the intestinal worms. A bit disgusting, sorry, I can´t hide the inside me.
"dolce" is Italian, you mean "dulce"
I didn´t know paprika was smoked
