I have some good friends who will be visiting soon and they are vegetarians, not vegan types, just plain old veggies. I have looked online for vegetarian recipes, but quite honestly they don't look right to me. I am looking for proven veggie recipies that don't require eggplant or curry. Any assistance would be greatly appreciated!

Teri when I had veggie friends staying a few months ago, I used a few recipes off here! They all seemed to work out ok and my friends didn't die or anything!!
It's an American site too so you may have better luck trying to get some of the ingredients than I did! (You ever tried to get butternut squash in Portugal?)
