How do I centre things using GuideML? Specifically text.

Hello!
Centering text is pretty straight forward.
Instead of the ... tags for your paragraph, you need to use ... (Note the spelling of CENTER.)
There are also attributes of LEFT and RIGHT should you wish to use them.
