Hi,
Sorry it took a while to get round to answering this question but the practice of spitting in the Heart of midlothian dates back to the time when the tolbooth, prison and public executions took place on the site and the criminals spitting as they walked past.
(Just in case you are that interested since I had to do a web search to verify (I thought it was spitting at the criminals so I've learned something new too ) here are a couple of reference sites
